This Whole30 Mayo is easy to make and the perfect condiment whether you are on a round or just trying to eat healthier. All you need is 4 everyday ingredients, a jar and an immersion blender. Making your own homemade whole30 mayonnaise is foolproof using this immersion blender method.

Crack egg into the base of a jar that's mouth is wide enough to fit your immersion blender, or alternatively into the cup attachment for your blender, making sure the yolk doesn't break.
Add dijon, a pinch of salt and lemon juice. Gently pour in the cup of oil, taking care not to break the yolk. Insert the immersion blender so it's touching the bottom of the jar, making sure the blades completely cover the yolk.
Blend for 20 seconds without moving, until the majority of the jars contents now resemble mayonnaise - white and thick. There will be some oil not incorporated at the top and that's ok. Move the stick blender up and down to incorporate it. Taste, then season with more lemon juice or salt if required. Push the blender back through the mayo to ensure all is incorporated.
Serve immediately or store in a sealed glass jar in the fridge.

I don’t know what happened but mine did not thicken up. I sued the exact measurements you stated. It’s completely pourable. Any ideas?

Hey Jeannette. Sorry to hear this one didn't work for you. I have a video on this post that shows how I make it which might help? I've never had an issue with it not thickening / being pourable but don't throw it away - turn it into a dump ranch dressing dressing by adding in some herbs 🙂

Hey Laura, I've got a video in the post that shows how I make this mayo which may help troubleshoot. There's also a long list of notes, including using a jar only wide enough for the immersion blender, not breaking the egg yolk etc. Don't throw out your mix now though - mix some herbs through it and make it a delicious ranch dressing.

Awesome recipe, turned out great, a little lemony for my taste, but probably as I used a fairly large lemon. I would note that you want your egg to come to room temp as I’ve heard that it won’t emulsify otherwise.

Loved the recipe and was not too citric at all. I ate the whole batch in one week but it’s just so good and easy to make. I do recommend pouring the oil instead though. Even if you move, there’s still a good chance the it comes out perfect.

I think you mean "compliant" not "complaint" when you give options for olive oil such as avocado oil or grapeseed oil. 🙂

I finally figured it out! I too have had on occasion the liquid Mayo after blending and followed the recipe to a T. I did and experiment today and added another egg (room temp) after the Mayo was liquid on first attempt. The egg yolk sank to the bottom and I emulsified again. This time it thickened! I am now assuming if the egg yolk isn’t big enough (medium to large size egg) then the ratio of yolk to oil is off, causing them to be liquid. Hopefully this works for others that end up with liquid Mayo the first time!

I have made this a few times, but today I tried Rice Bran oil and it failed, which was disappointing. Unfortunately I tipped it out before checking the reviews otherwise I would have thrown another egg in to see!

This recipe works every time! I have tried other immersion blender mayo recipes with mixed results. Somehow it must be the whole egg thing prior to blending. Thank you soooo much!!!!
