Yes, all you need is one banana to make these small batch banana muffins!

I've always been passionate about ensuring no brown banana ever goes to waste! I have several banana muffins recipes that use two or four bananas, but I thought we needed a special recipe that puts that one lone banana we're sometimes left with to good use!

These muffins are absolutely scrumptious and are perfect for when you want a sweet treat but don't want to make a recipe that yields 12 muffins! This recipe will give you 5 muffins, and if that's still too many rest assured you can freeze them.

WHAT YOU'LL NEED

Here's what you'll need to make these banana muffins (full measurements listed in the printable recipe card below)...

  • Ripe Banana - the darker and spottier, the better. 
  • Egg - you'll only need the egg white, no yolk!
  • Olive Oil
  • Brown Sugar
  • Vanilla Extract
  • Cinnamon
  • Salt
  • Self Raising Flour - OR use All Purpose Flour and Baking Powder instead. You'll need ¾ teaspoon of baking powder and ⅓ cup of all purpose flour.  
  • Chocolate Chips

HOW TO KEEP MUFFINS FROM STICKING TO THE PAN

There's nothing worse than making a delicious batch of freshly cooked muffins and finding that they stick to the pan!  Here's a few easy ways to make sure you don't encounter this problem... 

  1. Grease the pan well - Even if you are using non-stick cookware you'll still need to ensure your grease your muffin tin well.  Feel free to use butter or cooking spray, just make sure you grease every hole well.  
  2. Take 5 - Allow your muffins to cool for 5 minutes in the tin before removing them.  
  3. Loosen up - Run a butter knife or a thin silicone spatula around the edges to loosen each muffin before you try to remove them from the tin.  
  4. Cool down - All that's left to do is individually move your muffins to a wire rack to cool down completely.  Easy peasy.

HOW TO MAKE ONE BANANA MUFFINS - STEP BY STEP

Preheat the oven to 180C / 350F and grease the muffin tray. 

Mash banana in a large mixing bowl, then add egg white, brown sugar, olive oil and vanilla.  Stir well to combine.

Sprinkle flour, salt and cinnamon on top and fold together until just combined.

Mix chocolate chips with ½ teaspoon of flour, then fold into the mixture.

Divide the mixture evenly into 5 muffin cups, then bake for 15 minutes or until muffins are golden and a skewer comes out clean.

Leave to cool in the pan for 5 minutes, then move to a wire rack to cool completely.

HOW TO STORE MUFFINS

Once cooled, store muffins in an airtight container lined with paper towel at room temperature for up to 3 days.  Or store them in the freezer in an airtight container or ziplock bag for up to three months.  

TOP TIPS FOR MAKING THIS RECIPE

  • Only use a very ripe banana for this recipe.  The spottier and darker, the better.  This will ensure there's plenty of flavour and sweetness in the muffins without needing to add excessive amounts of sugar.  
  • You can make these with or without chocolate chips.  Feel free to experiment with your favourite add-ins - walnuts, blueberries etc. 
  • If you are using chocolate chips, toss them with some flour before adding them to the mixing bowl to stop them from sinking.

Honestly, I first tried making these on a whim. A friend and I were having a lazy weekend baking session, and we had a jar of chocolate hazelnut spread lying around. We decided to see what happened if we added it to our brownie batter.

100g brown sugar
50g granulated sugar
2 eggs
2 teaspoons vanilla extract
200g Nutella

Maybe this is the closest I’ll ever get to Gigi Hadid, hahaha. This Gigi Hadid Pasta is actually just a version of the classic Italian-American dish, penne alla vodka. But back during the Covid era, Gigi Hadid shared the recipe on her social media, and ever since then, everyone’s been calling it Gigi Hadid Pasta.

Plus, it's super simple to make with minimum prep time, so even if you're not a pro in the kitchen, you've got this.

Here's what you'll need to make this recipe:

8 ounces or 225 grams of pasta (like penne)
2 tablespoons olive oil
2 cloves garlic, finely minced
1 small shallot, chopped (or red onion)
¼ cup tomato paste
2 tablespoons vodka (optional)
½ cup heavy cream
1 teaspoon chilli flakes (or add red pepper flakes)
½ teaspoon salt
½ teaspoon black pepper

    Love, love, love this recipe for that one banana you don't want to eat, but you don't want to throw it out either. Topped with some leftover apple bits I had from something else and baked in my silicone egg mold in my airfryer for 15 minutes on 320. Let cool then circle a knife around the inside and gently pull out. Thanks for sharing this delish recipe!!
