INSTRUCTIONS
Oven Method
Preheat the oven to 160C / 320F and line a baking sheet with foil.
Melt butter and honey together in a small saucepan on medium heat.

Add in peanuts and cinnamon and stir to combine.

Pour the peanuts onto the prepared baking sheet and spread out into a single layer. Place in the oven for 15-20 minutes, or until golden brown, being sure to stir every 5 minutes so they cook evenly.

Leave to cool on the tray for a few minutes, then sprinkle sugar and salt on top to taste and mix to combine. Keep mixing the peanuts every few minutes as they cool to stop them from sticking together, then serve or transfer to an airtight jar or container.

Air Fryer Method
Melt butter and honey together in a small saucepan on medium heat. Add in peanuts and cinnamon and stir to combine.
Pour the peanuts into the air fryer basket and spread out into a single layer. If your basket is small you'll want to cook in two batches so the peanuts aren't overlapping too much.

Cook the peanuts on 180C / 350F for 8 - 10 minutes, or until golden brown, being sure to shake the basket every few minutes to ensure the peanuts are cooked evenly.

Tips for making this recipe
- Be sure to stir your peanuts regularly while roasting (or shaking the basket regularly if you are air frying). Peanuts on the edge of the tray tend to brown faster, so this ensures they brown evenly.
- If using the air fryer you may need to cook in two batches to ensure the nuts are not overlapping significantly in the basket.
- Cooking times can vary so please be sure to check on your peanuts regularly as they cook. When the colour starts to change to golden brown, they're ready!
- I put sugar and salt to taste as I know our tastes can vary wildly. Add both on gradually and taste as you go.
- Be sure to stir your peanuts a few times as they cool so they don't clump together.
- Store in an airtight jar or container at room temperature for up to two weeks.
