I have a long running love affair with chocolate covered almonds.  They're dangerously addictive but hit the spot so well when the chocolate cravings hit.

And the great news is you can make them at home quickly, easily and cheaply.  Yes that's right my friends - these chocolate covered almonds are budget-friendly!

We've all bought one of those giant packs of plain almonds before and wondered how on earth we're going to use them.  Well not anymore - just make these chocolate almond clusters.  Whip up a batch for treats throughout the week, or give them as gifts during the holiday season.

Of course you could individually dip every almond with chocolate but ain't nobody got time for that.  Make them into clusters instead.  Besides, who is going to complain about getting more chocolate and more almonds in each bite?!  Not me!

I love that these ingredients are all budget-friendly and easy to keep on hand always.  Here's what you'll need (full measurements listed in the printable recipe card below)...

  • Natural Almonds
  • Milk or Dark Chocolate

Optional Toppings:

  • Sea Salt
  • Desiccated Coconut or Coconut Flakes

How to make chocolate covered almonds?

First, roast your almonds - in the oven: Roasted Almonds or in the air fryer:  Air Fryer Roasted Almonds.

Next fill a saucepan with a few inches of water and place on low heat.  Set a heatproof bowl in the mouth of the pot, making sure the water doesn’t touch the bottom of the bowl, and wait for the water to come to a simmer.  Add chocolate to the bowl and stir regularly with a metal spoon until the chocolate is completely melted.

Remove the saucepan from the heat, then remove the bowl from the saucepan, being careful not to burn yourself with steam (use oven mitts!).  Add almonds to the bowl and stir to combine.

Grab a tablespoon of chocolate almonds at a time and place onto a baking tray covered in parchment paper.  Sprinkle each cluster with sea salt or coconut, if desired, then place in the fridge for 1 hour or until completely set.

Storage Advice

Chocolate covered almonds can be stored in an airtight container at room temperature for about 2 weeks.  If you are layering them in the container place a piece of parchment paper in between to stop from sticking.

Can you freeze chocolate almond clusters?

You can freeze chocolate covered almonds for a few months in an airtight ziplock bag.  When defrosting place in the fridge for 24 hours.  This will allow the chocolate clusters to slowly thaw and will help prevent the formation of condensation on the surface, which can also lead to blooming (the dreaded white coating).

Top Tips

  • You can use natural almonds instead of roasted.  Either will work well, you'll just notice roasted add more depth of flavour.
  • Feel free to use either milk or dark chocolate.  If you're wanting your chocolate covered almonds to be vegan or dairy free go with dark chocolate.
  • If you find your chocolate isn't smooth after melting, add 1 teaspoon of coconut oil and stir through.
  • You can leave the clusters as is, or top with either sea salt or desiccated coconut or coconut flakes, before setting in the fridge.
  • If you want single almonds follow the same method but instead of spooning clusters onto the baking tray you will need to transfer each almond separately.  Ultimately it's a whole lot of effort for much the same result!

Lemon Brownies 🍋🧈

A chewy texture bursting with lemon aromas will melt in your mouth and keep you on your knees. You'll need around 15 minutes to prepare this dessert, and then it bakes in the oven for a bit. In less than an hour, it's a quick treat the whole family will enjoy. I'm fond of the creamy lemon glaze that takes this recipe to another level.

LEMON BROWNIES INGREDIENTS

200 grams of white sugar
287 grams of all-purpose flour
170 grams of white chocolate
170 grams of butter
3 tablespoon lemon zest
3 tablespoon fresh lemon juice
3 large eggs
¼ teaspoon salt

LEMON GLAZE INGREDIENTS

125 grams of powdered sugar
1-3 tablespoon fresh lemon juice
1 tablespoon lemon zest

I love Mexican food, so it's no surprise that one of my favourite salads is Mexican inspired.  This Mexican Chicken Salad is full of good-for-you ingredients and is filling enough to be a complete meal on its own.  The chicken is juicy and bursting with flavour.

It's on the table in 15 minutes.  Yes, you heard right - 15 minutes!  This does require a little multi-tasking, like chopping salad ingredients while waiting for the chicken breast to cook.  But totally doable.
