Chocolate Chia Pudding

This easy and healthy Chocolate Chia Pudding is great for a quick breakfast on the go or a late night chocolate fix.  Mix the ingredients together and they'll transform into a thick and creamy pudding overnight.

Chia puddings had a moment a few years back and then kind of fizzled away.  I must admit I wasn't a huge fan of the trend, mostly because I found plain chia puddings really boring.  But these chocolate chia puddings were my only exception.  They are damn delicious.  

When it comes to these puddings, it's all about the toppings.  I've put a huge list of suggestions below but I highly recommend strawberry and banana slices with some dark chocolate chunks and coconut sprinkled over.  It's not the only way to enjoy these, but it is certainly my favourite.

🥘 INGREDIENTS 

I bet you already have most, if not all of these ingredients in your cupboard right now.  Here's what you'll need (full measurements in the recipe card below)...

  • Chia Seeds
  • Milk - whatever milk you like. Cows, almond, coconut etc - it all works!
  • Unsweetened Cocoa Powder - or use sweetened, I won't judge.
  • Rice Malt Syrup / Brown Rice Syrup - or use maple or honey.
  • Vanilla Extract
  • Cinnamon

🍴 INSTRUCTIONS

Mix all the ingredients together in a jar or bowl (photos 1-2). 

Cover and leave in the fridge overnight (or at least 6 hours).  

To serve, portion the pudding evenly into two jars or glasses.  Serve on it's own (but why?) or with your choice of toppings (see the list below). 

🍫 TOPPING IDEAS

Toppings really make these puddings.  Choose a few of your favourites and mix it all up:  

  • Strawberry or Banana Slices
  • Shredded Coconut 
  • Peanut Butter / Almond Butter (I've tried adding it to the pudding itself but preferred it being on top) 
  • Dark Chocolate Chunks / Chips
  • Chopped Almonds or Walnuts
  • Greek Yoghurt
  • Granola

🥣 STORAGE ADVICE

Chia pudding can be made ahead.  Simply store in an airtight container and leave in the fridge for up to 5 days.

  • To get a layered effect like in my recipe photos, simply fill a glass halfway with pudding, cover completely with banana slices, then top with more pudding.

Honestly, I first tried making these on a whim. A friend and I were having a lazy weekend baking session, and we had a jar of chocolate hazelnut spread lying around. We decided to see what happened if we added it to our brownie batter.

Ingredients:

125g unsalted butter
100g brown sugar
50g granulated sugar
2 eggs
2 teaspoons vanilla extract
200g Nutella
¼ teaspoon salt
150g all-purpose flour
2 tablespoons cocoa powder
100g dark chocolate chips

Maybe this is the closest I’ll ever get to Gigi Hadid, hahaha. This Gigi Hadid Pasta is actually just a version of the classic Italian-American dish, penne alla vodka. But back during the Covid era, Gigi Hadid shared the recipe on her social media, and ever since then, everyone’s been calling it Gigi Hadid Pasta.

Plus, it's super simple to make with minimum prep time, so even if you're not a pro in the kitchen, you've got this.

Here's what you'll need to make this recipe:

8 ounces or 225 grams of pasta (like penne)
2 tablespoons olive oil
2 cloves garlic, finely minced
1 small shallot, chopped (or red onion)
¼ cup tomato paste
2 tablespoons vodka (optional)
½ cup heavy cream
1 teaspoon chilli flakes (or add red pepper flakes)
½ teaspoon salt
½ teaspoon black pepper
¼ cup Parmesan cheese, freshly grated
1 tablespoon butter
A handful of fresh basil for garnish

Oh yum, it looks so good! I like adding chia seed to yoghurt and letting it sit for a minute or two - like an instant chia pudding! 🙂 I should make proper chia pudding one day, a recipe like this is a good way for me to start! 🙂

I keep seeing Chia everywhere, but I'm scared to try them. There's not a lot of foods I don't like taste-wise, but texture-wise I have a lot of issues! But since this has chocolate, I guess I can give it a try. 🙂
