This cauliflower soup with bacon reheats well and can be kept in the fridge for a few days. If you're wanting to freeze though make sure you leave out the heavy cream. Cream tends to go a bit funny in the freezer, so instead of adding it to the entire pot of soup add a dash to each bowl as you serve.

STORAGE ADVICE
TOP TIPS
- Cooking the bacon bits first means you don't need any cooking oil for this recipe. You can then use the leftover bacon fat to sauté the onion and garlic. This adds a lot of flavour to the soup.
- Use more stock to achieve your desired soup thickness. I find I generally add another cup through the course of cooking the soup, but it's always best to start conservatively and work your way up.
- If you don't like crispy bacon bits on top of your soup, simply blend all the bacon bits in with the soup.
- Don't add cream to the entire soup if you are wanting to freeze it. Cream tends to go a bit funny in the freezer so just add a dash of cream to each bowl as you're ready to serve.

Cassie, I've never made a cauliflower soup that I've really loved but looking at your recipe I notice potatoes. Maybe that's what I'm missing. Going to try it. It's been a long cool winter here in North Queensland too. We love the break from the heat and the chance to eat hearty soups like this.

I find the potato helps make it creamy without cream, if that makes sense haha. I was wondering what your weather might be like up there. We've had some cracker days at 28 degrees, but the mornings have been bitterly cold and I've had to wear so many layers and gloves for our morning walks!

This soup was truly delicious and so super easy to make. I whipped it up when I.got a surprise visitor for lunch. I love how your recipes have ingredients that I usually have on hand... I just saw the nice cream recipe... can I substitute choc buds if I don’t have cocoa powder!???

Hi Cass, I made this on the weekend for a friend who can't have dairy at the moment. I used coconut cream in place of the cooking cream. I definitely prefer the original version but the dairy free version was still delicious!

Made this today as I had an extra cauliflower head to use up. As we follow a lower carb diet I only used one potato but it was still a very thick and wonderfully warming soup. Easy to make and once I find some Spudlite low carb potatoes it’ll be a real winner.
