Buttermilk Banana Bread made with roasted bananas is so moist and full of flavour.  Very easy to prepare and made with simple, everyday ingredients.  Great for morning tea and it freezes well so you can stash some for later.

I questioned whether the internet really needed one more banana bread recipe but one bite of this Buttermilk Banana Bread and I knew the answer was YES.

I have a Low Sugar Banana Bread that gets a serious workout in our house.  It's healthy and better for you and really delicious.  I like to think of it as my everyday banana bread.

But this Buttermilk Banana Bread - it's your real deal, sugar-loaded, cafe-style banana bread.  The smell of it cooking in your oven alone is enough to make you weak at the knees.

When I make baked goods I normally try and give them away pretty quickly or else I tend to eat the whole batch, but I was pretty keen to hold on top every slice of this banana bread.

One of the highlights of this recipe is roasting your ripe bananas before mixing them in.  This brings out the bananas sweetness and flavour even more.

The buttermilk helps keep the bread moist, and the result is a rich and flavourful banana bread.  Slather your slices with some butter and enjoy warm - that's a must!

HOW TO MAKE MOIST BANANA BREAD?

Adding buttermilk to the mixture helps keep the banana bread moist.  This is due to the mild lactic acid that is present in buttermilk.

When added to batter, this acidity helps keep baked goods like banana bread moist by breaking down long, tough strands of gluten.

INGREDIENTS

This banana bread uses everyday ingredients which most of us have on hand all the time.  The only ingredient you might not have already in buttermilk, and whilst it really does compliment this banana bread well you can replace it with regular milk.

Here's what you'll need (full measurements are listed in the printable recipe card below)...

  • Very Ripe Bananas
  • Unsalted Butter
  • Brown Sugar
  • Eggs
  • Vanilla Extract
  • Buttermilk
  • All Purpose / Plain Flour
  • Baking Soda
  • Baking Powder
  • Cinnamon
  • Salt

INSTRUCTIONS

Preheat the oven to 180C / 350F and line a loaf pan with baking paper.  Place bananas on a baking tray lined with baking paper or a silicone mat and bake for 15 minutes.  Remove and allow to cool.  Turn the oven down to 160C / 325F.

In a large mixing bowl, use a hand mixer to cream butter and sugar.  Add eggs, vanilla and buttermilk and continue to mix. Then add in the bananas and mix until well combined.

In a seperate bowl mix together the flour, baking powder, baking soda, cinnamon and a pinch of salt.  Pour wet ingredients in and stir until just combined.

Pour mixture into a loaf pan and place in the oven for 45-50 minutes, until the bread is cooked through and a skewer comes out clean.

Leave in the pan for 10 minutes, then move to a cooling rack to cool completely.

Serve warm with lashings of butter.

STORAGE ADVICE

Store banana bread in an airtight container to keep it from drying out.  You can leave it at room temperature for a day or two, or store it in the fridge for up to 5 days.

You can also freeze banana bread.  Individually wrap slices in plastic film and place in an airtight container or ziplock bag, and freeze for up to two months.

But back during the Covid era, Gigi Hadid shared the recipe on her social media, and ever since then, everyone’s been calling it Gigi Hadid Pasta.

Plus, it's super simple to make with minimum prep time, so even if you're not a pro in the kitchen, you've got this.

Here's what you'll need to make this recipe:

8 ounces or 225 grams of pasta (like penne)
2 tablespoons olive oil
2 cloves garlic, finely minced
1 small shallot, chopped (or red onion)
¼ cup tomato paste
2 tablespoons vodka (optional)
½ cup heavy cream
1 teaspoon chilli flakes (or add red pepper flakes)
½ teaspoon salt

Made it for the very 1st time so was happy it all came together. Not a strong taste of banana so might use more next time or maybe not roast them, what do you think?? Anyway I’m so proud to have made it. Thank you for recipe 👍🏼

Hey
Just bought a bread machine and was wondering if this recipe would work in it? Possibly add the ingredients wet on bottom dry on top and just figure out what type of bread to to tell the machine to use. The other question would be is this a 1lb. 11/2 lb or 2 lb loaf. Thanks for any help you can give.
This sounds like a great recipe for banana bread.
Hopefully we can make this work If not I’ll cook it it like your instructions call for.

Hi There! I've always wanted a bread machine but having never experimenting on one I can't say if this will work on not. I did, however, find a great post that might help you give banana bread a go in the bread machine - https://www.thespruceeats.com/banana-bread-machine-recipe-304378. I'd also say the loaf is 1 - 11/2 lbs. Hope this helps point you in the right direction! Happy baking 🙂

I don t have 4 small mini loaf pans, just the standard size pan for baking banana bread in.  Could I follow the same recipe and baking time if I pour all the batter into one standard sized pan?

Oh. My. Heavens. These are so delicious! They are sweeter than my regular banana bread recipe (which I love). I also enjoyed the texture and buttery flavor. I made 24 muffins (baking for 30 minutes) and my kids downed them all in minutes! ??
