Preheat the oven to 180C / 350F and line a loaf pan with baking paper. Place bananas on a baking tray lined with baking paper or a silicone mat and bake for 15 minutes. Remove and allow to cool. Turn the oven down to 160C / 325F.
In a large mixing bowl, use a hand mixer to cream butter and sugar. Add eggs, vanilla and buttermilk and continue to mix. Then add in the bananas and mix until well combined.
In a seperate bowl mix together the flour, baking powder, baking soda, cinnamon and a pinch of salt. Pour wet ingredients in and stir until just combined.
Pour mixture into a loaf pan and place in the oven for 45-50 minutes, until the bread is cooked through and a skewer comes out clean.
Leave in the pan for 10 minutes, then move to a cooling rack to cool completely.
Serve warm with lashings of butter.
HOW TO STORE BANANA BREAD
Store banana bread in an airtight container to keep it from drying out. You can leave it at room temperature for a day or two, or store it in the fridge for up to 5 days.
CAN YOU FREEZE BANANA BREAD?
You can absolutely freeze banana bread. Individually wrap slices in plastic film and place in an airtight container or ziplock bag, and freeze for up to two months.

Made it for the very 1st time so was happy it all came together. Not a strong taste of banana so might use more next time or maybe not roast them, what do you think?? Anyway I’m so proud to have made it. Thank you for recipe 👍🏼

Hey
Just bought a bread machine and was wondering if this recipe would work in it? Possibly add the ingredients wet on bottom dry on top and just figure out what type of bread to to tell the machine to use. The other question would be is this a 1lb. 11/2 lb or 2 lb loaf. Thanks for any help you can give.

Hi There! I've always wanted a bread machine but having never experimenting on one I can't say if this will work on not. I don t have 4 small mini loaf pans, just the standard size pan for baking banana bread in. Could I follow the same recipe and baking time if I pour all the batter into one standard sized pan?

Oh. My. Heavens. These are so delicious! They are sweeter than my regular banana bread recipe (which I love). I also enjoyed the texture and buttery flavor. I made 24 muffins (baking for 30 minutes) and my kids downed them all in minutes! ??
