Instructions
1
Line 2 mini loaf pans or 1 regular sized loaf pan with baking paper.
2
Place butter, brown sugar, white sugar and cocoa powder in a microwave safe bowl. Microwave in 20 second batches, stirring well after each time, until butter is melted and well combined.
3
Add vanilla and stir to mix through. Set bowl aside for a minute to allow to cool slightly.
4
Mix in the egg, then add flour and mix well until combined.Fold in the chocolate chips (and the optional chocolate chunks if using).
5
Evenly divide the mixture across the prepared mini loaf pans (or just pour into the 1 loaf pan if that's what you are using), and bake in the air fryer on 160C / 320F for 20-25 minutes or until a toothpick inserted comes out with only a few fudgy crumbs attached.
6
Leave the brownie in the loaf pans for 10 minutes to cool, then transfer to a wire rack to cool completely.

The chocolate chunks are optional but highly recommended. Grab your favourite chocolate bar and cut into small chunks and fold through. Adds to the chocolate intensity.
Feel free to use 2 mini loaf pans or 1 regular loaf pan. It all works as long as it fits in your air fryer.
Make these brownies in the oven instead on 160C / 320F for 20-25 minutes or until a toothpick inserted comes out with only a few fudgy crumbs attached.
