We all know the air fryer is great for making things like tater tots and whole chicken but did you know it's also great for baking too? When the weather gets far too hot to contemplate turning on the oven (which is 6 months of the year here in Australia) the air fryer can be your answer to delicious baked goods without breaking a sweat.
These Air Fryer Banana Muffins are ready in under 20 minutes and are so easy to prepare. If you have a smaller air fryer you may need to do two batches, but I've never found that to be a problem since I can eat a few muffins while waiting for the second batch to be done 🙂
Oh, and if you don't have an air fryer never fear. These muffins are the air fryer version of my mini banana muffins that are made in the oven, so just head over and grab the directions from there.

WHAT IS AN AIR FRYER?
An air fryer is a kitchen appliance that uses convection to rapidly circulate hot air around food to cook and crisp it up. It’s essentially a mini convection oven that fits perfectly on your countertop.
CAN YOU USE PAPER MUFFIN CASES IN THE AIR FRYER?
You can definitely use paper muffin cases in the air fryer. I'm a big fan of using silicone cases as they hold their shape well and are reusable, but if you don't have them on hand just double up paper cases to make them extra sturdy.

INGREDIENTS

These muffins are made with simple everyday ingredients most of us always have on hand. Here's what you need (full measurements listed in the printable recipe card below)...
- Ripe Bananas – the darker and spottier, the better.
- Egg
- Olive Oil
- Brown Sugar
- Vanilla Extract
- Cinnamon
- Self Raising Flour – please note if you are in America you’ll need to use All Purpose Flour + Baking Powder. American self raising contains salt for biscuits, and this would be too salty for this cake.
INSTRUCTIONS
Mash bananas in a large mixing bowl, then add egg, brown sugar, olive oil and vanilla extract. Stir well to combine. Sprinkle flour and cinnamon on top and fold together until just combined.

Divide the mixture evenly into muffin cases (silicone or paper) and carefully place into the air fryer basket.

Slide the basket into the air fryer and bake on 160C / 320F for 15 minutes or until muffins are cooked through and a skewer comes out clean. If you have a smaller air fryer you may need to do two batches.

Move to a wire rack and allow the muffins to cool in the cases.

TIPS FOR MAKING AIR FRYER BANANA MUFFINS
- The air fryer tends to brown muffins more than the oven, but this does not effect the taste at all.
- Only use very ripe bananas, otherwise you won't get that sweet banana flavour.
- If you’re in America, don’t use Self Raising Flour as the recipe directs. Store bought American self raising flour contains salt (as it’s commonly used for biscuits). Instead, use ¾ cup of all purpose flour and 1.5 teaspoons of baking powder.
- Try these muffins with chocolate chips for an extra treat!
- Use either silicone muffin cases or double up paper cases for this recipe.
- If you have a smaller air fryer you may need to cook the muffins in two seperate batches.
- Store your muffins in an airtight container at room temperature for a few days. You can also freeze your muffins in an airtight container for a few months.

Hey Amber - the good news is you can convert any oven recipe to air fryer. so if you have a recipe you love for pear bread you could definitely just cook it in the air fryer instead of these muffins 🙂

Hey Tracy - I'm surprised to hear you had problems with this one but understand how disappointing it is when something doesn't work out. This recipe is actually an air fryer version of another recipe on the blog, and both have many successful reviews. When muffins don't rise there could be a few things at play - the baking powder was old (it usually only stays fresh for 3 mths after opening), the oven / air fryer not being hot enough - this can happen if you open the door or basket too quickly during the baking process before it has a chance to rise, or if the batter was under-mixed. I hope that helps troubleshoot.

I made these this morning and only had one banana, so used an equal amount of strawberry applesauce as well. Came out fantastic! I think I will try with pumpkin or Greek yogurt next time. Great, easy recipe for a fast breakfast.
