Honey Joys (Honey Crackles)

Honey joys are a classic old-fashioned childhood treat.  All you need is 4 ingredients - cornflakes, honey, sugar and butter - and you'll have a batch of these delicious honey crackles in 20 minutes.  The only honey joy recipe you'll ever need!

Is there are more iconic kids party treat than honey joys?  There wasn't a birthday party I attended growing up that didn't have a plate of these delicious honey crackles, along with fairy bread and chocolate crackles.

It had been years since I had one (ok maybe two decades) but one bite and I was brought right back to childhood.  

This is the classic honey joys recipe that was found on the back of the cornflakes box.  I mean, why mess with perfection?  

These sweet golden clusters of honey covered cornflakes are absolutely moreish.  You don't need to wait for a birthday party to make them.  They're perfect for any occasion that requires you to bring a plate to share.

INGREDIENTS

One of the best parts of honey joys is that they are made with simple budget-friendly ingredients that most of us always have on hand.  Here's what you'll need to have on hand to make a batch (full measurements in the printable recipe card below)...

  • Honey 
  • Cornflakes
  • Butter
  • Caster Sugar - Caster sugar is slightly finer than granulated sugar but either can be used in this recipe.  See this super helpful guide "what is caster sugar" guide for more information.

INSTRUCTIONS

Preheat the oven to 150C and line 2 muffin tins with paper liners.

Melt butter, sugar and honey in a small saucepan over medium heat, stirring regularly, until the mixture is smooth and frothy.

Remove saucepan from heat and add in cornflakes, mixing well to combine.

Working quickly spoon the mixture into the prepared paper liners.

Bake for 15 minutes, or until golden. Transfer to a wire rack to cool completely.

MAKE AHEAD

Honey joys can be made a day before being served and they will still be crunchy and fresh.  

STORAGE ADVICE

Store leftover honey joys in an airtight container at room temperature for up to 2 days, or in the fridge for up to a week.

TOP TIPS

  • Don't have caster sugar?  Use granulated sugar instead.
  • Use fresh cornflakes.  You don't have to open the packet that day but don't use the pack that's been left unfinished in the back of the cupboards for months on end.  Honey joys are best when they're crispy!
  • Feel free to make them the day before being served - they will still be crunchy and fresh. 
  • Makes 12 large honey joys or 24 smaller honey joys.  This will all depend on what size paper liners you use and how much you fill them up. 
  • Store them in an airtight container once they've cooled completely.  Keep them at room temperature if you'll eat them in a day or two.  Pop them in the fridge to extend them to a week.
