This Easy Apple Cake recipe is great for when you need a dessert in a pinch. Made with easy everyday ingredients including yoghurt, eggs and butter, and topped with fresh apple slices that caramelise during baking. This apple yogurt cake is moist and flavourful and great served warm or cold. The best apple cake recipe you'll ever try!

Preheat oven 160C / 320F.
Mix eggs, sugar, butter, cinnamon, vanilla & yoghurt together in a large bowl.
Gradually fold in the self raising flour and mix until just combined.
Pour into greased springform pan (22cm / 9 inch) or round cake tin.
Arrange apple slices on top in a decorative pattern. Sprinkle apple slices with cinnamon sugar.
Pop in oven for 45 mins, or until golden and skewer comes out clean. Allow to cool.
Serve as is, warm or room tempature, or with cream, ice cream, custard or yoghurt.
SUGAR:
Caster Sugar is known as superfine sugar, baker's sugar or bar sugar in America.
FLOUR:
If you are in America, don't use Self Raising Flour (as your store bought kind has added salt). Instead, use all purpose / plain flour mixed with 2 teaspoons of baking powder.
APPLES:
Most apples will work well in this recipe. I like to use pink lady as I prefer a sweeter apple. Fuji or gala would also work well. Or if you like a more tart apple - honeycrisp or granny smith. You could even use tinned apples.
CINNAMON SUGAR:
You can buy pre-made cinnamon sugar from the spice section of your supermarket or just make your own. Simply mix 3 tbsps of granulated sugar with 1 & 1/2 tsps on cinnamon. Store leftovers in an airtight container.
OTHER VARIATIONS:
Try different fruits instead of apple - peach or pear would work well - YUM!
STORING:
Store in an airtight container in a cool dry place for 2 days, or in the fridge for up to 5 days. You can also freeze leftovers for up to 1 month.

What a delight mine turned out beautifully, I reversed the apples and put them underneath as I find the apples dry up a bit on top.thanks for a super recipe will do it again

This was delicious! I made it for family dinner night and it generously served 8 of us with ice cream. I had it mixed and into the oven in no time! I buttered and floured an enamel pie dish and it came out wonderfully. Will be making this again for the lunchbox!

This is a wonderfully moist cake. I layered apples on the bottom and the top and included nutmeg and cloves in equal parts to the cinnamon. I also reduced the sugar slightly because I used royal gala apples,which are sweet. It's worth noting that using a good quality, creamy Greek yogurt is essential. I'm keen to try this recipe using tart apples. This recipe was a winner and is now one of my favourites. Thank you🤗
