If you're looking for a healthy snack that tastes great you've got to try these coconut date balls! These energy balls are made with just three ingredients and are so easy to prepare.

Medjool dates give a lovely caramel flavour to the balls but also act as a natural sweetener so there's no need to add sugar. Dates give our bodies a great natural energy boost too, so give these balls a try when you hit the wall in the afternoon and start craving chocolate!

These date and coconut energy balls are vegan and gluten-free. They also freeze well so make a big batch and store them away for easy snacking.

WHAT YOU'LL NEED

Here's what you'll need to make a batch of these date and coconut balls (full measurements listed in the printable recipe card below)...

  • Medjool Dates
  • Almonds
  • Desiccated Coconut / Finely Shredded Coconut (unsweetened)

HOW TO MAKE COCONUT DATE BALLS - STEP BY STEP

Pour almonds into a food processor and pulse until roughly chopped.

Throw the rest of the ingredients into the food processor and blitz until the mixture is well combined.  If your find the mixture isn't sticking together, add 1-2 tablespoon of water in and blitz again.

Scoop a tablespoon of the mixture into your hand and roll into a ball. Pour some coconut onto a plate and roll the ball over the coconut to coat the outside. Repeat with the remaining mixture.

Store energy balls in an airtight container in the fridge for a week, or the freezer for up to 3 months.

TIPS FOR MAKING THIS RECIPE

  • Don't pulse the almonds for too long at the beginning or you'll make almond butter.  Just pulse them enough that they're roughly chopped.
  • Your mixture is ready when it holds together on its own without falling apart.  If yours is having trouble sticking, gradually add a tablespoon or two of water while it's being blitzed in the food processor.
  • Feel free to double the batch.

Honestly, I first tried making these on a whim. A friend and I were having a lazy weekend baking session, and we had a jar of chocolate hazelnut spread lying around. We decided to see what happened if we added it to our brownie batter.

But back during the Covid era, Gigi Hadid shared the recipe on her social media, and ever since then, everyone’s been calling it Gigi Hadid Pasta.

Plus, it's super simple to make with minimum prep time, so even if you're not a pro in the kitchen, you've got this.

Here's what you'll need to make this recipe:

8 ounces or 225 grams of pasta (like penne)
2 tablespoons olive oil
2 cloves garlic, finely minced
1 small shallot, chopped (or red onion)
¼ cup tomato paste
2 tablespoons vodka (optional)
½ cup heavy cream
1 teaspoon chilli flakes (or add red pepper flakes)
½ teaspoon salt
½ teaspoon black pepper
¼ cup Parmesan cheese, freshly grated
